Prosciutto-Wrapped Chicken

What You'll Need:

  • 4 boneless, skinless chicken breasts
  • 4 thin slices prosciutto
  • 4 oz fresh mozzarella cheese
  • 1/4 cup sun-dried tomatoes
    (packed in olive oil, drained)
  • 2-3 cloves garlic, crushed
  • 1 teaspoon dried basil
  • Salt and Pepper, to taste

Directions:

Preheat oven to 450.

Flatten chicken to approximately 1/2 inch thickness.

Cut off 4 slices of mozzarella, approximately 1/4 inch thick.

Chop sun-dried tomatoes and combine with garlic and basil in a small mixing bowl.

Place a slice of prosciutto on a clean working surface and top with a chicken breast, a slice of mozzarella and 1/4 of the tomato-garlic mixture. Beginning at the narrow end of the chicken breast, roll up and place seam side down on a cookie sheet. Season with salt and pepper.
