Skillet Fried Potatoes and Onions

Growing up, this was one of my favorite dishes that my dad would cook for us. This isn't my dad's recipe, but it's my version of it. I first attempted this last summer and it turned out so good, that it has made it's way into our rotation. Enjoy!

Skillet Fried Potatoes and Onions


What You'll Need:

8-10 Red Potatoes
1 large sweet onion
4 Tablespoons butter
2 Tablespoons Olive Oil
Garlic Powder, to taste
Salt and Pepper, to taste














Directions:

Peel and slice potatoes and onions as thin as you can.
The potatoes should be nearly transparent.

In a large skillet, melt butter over Med-High heat. Add olive oil.

Alternate layers of potatoes and onions and cover. Cook covered for about 10 minutes.

Using a spatula, carefully flip potatoes and onions. Season with some garlic, salt and pepper. Some of them may be crispy brown but don't be alarmed, those ones have the best flavor! ;)
Continue to cook covered for about 5 minutes.

Remove cover and flip, and season a bit more. Continue to stir potatoes a few more times until they look done. They will be soft and some will be browned and some of the onions will be carmelized.
